I keep a container of mixed beans on the counter at our house for the times when I don’t need something quick but I do want something economical and delicious and its a great fall recipe! In this container I have split peas, speckled beans, kidney beans, pinto beans and white navy beans. I like to make this soup on a Sunday in the crock pot and that way its ready for dinner on Monday. Beans are packed with protein and I really love the price tag myself but this is a recipe the whole family enjoys!
Ingredients
Beans, Bacon, Onion, garlic, water, homemade chicken bouillon cubes, homemade vegetable broth, thyme, salt, pepper, red pepper (all spices are to taste)
Process I follow
First I rinse the lb of beans.
Then I take the beans and cover them with water and place them on the stove to simmer for about 45 minutes.
While that is simmering I fry up about 6 slices of thick sliced bacon.
I place the following items in the crock pot and cover with 4 or 5 C. of water.
Once the beans are done simmering I place them in the crock pot.
2. Cups of Vegetable Broth (I always have
veggie or chicken broth in the freezer right now I have more veggie broth)
2 Chicken bouillon Cubes
Once the bacon is done chop up the bacon and add that too. When pouring the bacon grease out of the pan reserve a little to fry up half an onion and 4 cloves of garlic that have been minced. Once the garlic and onions are done throw them in the crock pot.
Pick some thyme from the herb garden if you have some if not (dried thyme will work fine) I just happen to have some right now.
Once everything is in the crock pot cook for about 8 – 10 hours on low. Your house will smell heavenly and the broth tastes a little like french onion soup!
Monday nights in our house are typically crock pot night you gotta’ love your crock pot and tonight because of this bean soup I am especially glad it is! Try it and let me know how you like it. This is really one of those recipes that truly could be categorized in the comfort food category or food for the soul. You got me with the bacon! Oh yum, I just love bacon! This soup sounds so tasty, I might have to try making something similar….but without the beans unfortunately, because as much as I love them they don’t love me!
