It’s tax day in the U.S. so for those that are running behind like we were and so excited about this special day; here is a delicious recipe to brighten your day! We love zucchini in our household but recently my husband asked me to try to make them a bit differently and instead of sautéing them we baked them and they were a huge hit! I know I shared this recipe with many of you on our recent podcast at “The Survival Mom Radio Network.” but wanted to write it down for all of you who wanted to try it!
The ingredients are simple but the taste isn’t.
Ingredients:
2 to 3 Zucchini
1 TBSP. Parmesan Cheese
2 to 3 tsp.Italian Herb Seasoning
1/2 Cup Grated mozzarella
1 TBSP. Olive Oil
Instructions:
Pre-heat oven to 375 degrees and place medallions on a cookie sheet greased with olive oil or lard. Wash and slice the zucchini into medallion pieces and place on cookie sheet. Brush olive oil on the tops of all the zucchini slices. Sprinkle italian herbs and parmesan on top. Bake for about 5 to 6 minutes and then flip and then sprinkle italian herbs, parmesan, and mozzarella on top and bake for about 5 to 6 more minutes. You may have to place on broil one minute before serving if you like the cheese slightly crispy.
It is so nice to know that soon we will be eating fresh delicious produce right out of the garden again!
