I am so excited to share my new favorite sweet tooth recipe “Paleo Chocolate Cupcakes with Almond Butter Frosting” and I hope you enjoy this treat as much as I did!
Chocolate Cupcakes
Ingredients:
¼ cup coconut flour
¼ cup cocoa
¼ teaspoon salt
½ teaspoon baking soda
3 eggs
¼ cup coconut oil
8 packets of stevia
Instructions:
In a separate mixing bowl combine coconut flour, cocoa, salt and baking soda
In your main mixing bowl, blend together eggs, oil and stevia
Blend the coconut flour, cocoa, salt and baking soda in with the wet ingredients
Line a cupcake tin with cupcake liners and scoop a spoonful into each muffin cup/liner (I did not line mine and they did stick to the pan so I am recommending that you do line yours)
Bake at 375° for 20-22 minutes
Cool on a rack
Enjoy! Should make about 10 cupcakes it made 9 for me but I did lick my fingers (Yes I confess I did!)
Almond Butter Frosting
Ingredients:
½ cup almond butter
½ cup palm shortening
4 packets of Stevia (this should be done to your taste! adding less or more as needed)
1/2 tsp. vanilla
dash of salt
Instructions:
Use a food processor to mix the almond butter and shortening if you get in a hurry and use your mixer the shortening will not cream up all the way. I have made it both ways.
Add the rest of ingredients until nice and creamy!
Enjoy! This frosted all 9 of my cupcakes and oh boy were they yummy!
Sometimes you just need a treat! I served these for me, my daughter and her boyfriend on my husband’s birthday and they were just what the doctor ordered! A nice delicious treat!
Just to clarify I normally would have used honey but my daughter and her boyfriend are following the “Keto” lifestyle which is stricter than Paleo. I only use stevia on rare occasion for example in my homemade “Mason Jar Mojitos” I just like the taste of honey better plus our bees make it! YUM!

Mr. CBB I absolutely loved them of course I’m not eating a lot of sweets so they tasted plenty of sweet to me! If you try them I would choose honey over stevia personally but the stevia was fine! and I like knowing I still can have cupcakes 🙂
