Stuffed Peppers with Quinoa
I gave up wheat! I gave up gluten! I still can have quinoa and rice but quinoa is a much healthier option than white rice for sure and I love the taste! I still eat plenty of rice though I love it!

I have to share with all of you this very easy and delicious Stuffed Peppers with Quinoa which you not only will love but you will also be excited about having for dinner! I love this have and I also love to pack leftovers for lunch too! As you all know I am a foodie; in addition that I like to feed my family delicious, nutritious, healthy recipes as well. This recipe accomplishes all of my food missions and I love to eat it! Because of the cheese you can get away without adding any salt to this recipe so it’s fairly low in sodium and you could control that even more by eliminating the cheese altogether if you wanted to.
You only need 7 ingredients:
4 Cups Cooked Quinoa (I cook this up with just water, butter and salt prior to this recipe)
1.5 lbs of lean ground beef or you could use turkey burger
6 large Peppers cored with tops cut off and ready to stuff
1 large can diced tomatoes
1 large can spaghetti sauce
Italian Seasoning any brand will work fine
and Garlic (You can use fresh or dried in the pantry whichever you have on hand)
Instructions:
Preheat your oven to about 350 degrees
Heat up a skillet and brown your ground beef or turkey burger and then drain it.
Add your garlic in at this time.
Stir your cooked quinoa in and add it to the ground beef.
Add your tomatoes, tomato sauce, and italian seasoning next.
Line your cored peppers up on a baking sheet.
Sprinkle some shredded cheese in the bottom of each pepper.
Simmer the quinoa hamburger mixture for about 20 minutes it will taste amazing!
Scoop the mixture into each pepper and top with cheese.
Place in oven.
Peppers can cook from 20 minutes to 45 minutes I like my peppers kind of crispy if you like yours cooked longer you may want to wait a little later in the cooking to add the cheese on top!
