It was very good Rachael Ray’s Parchment Leg of Lamb recipe……I used a Trader Joe’s Leg of Lamb with the pop up timer..it turned out tender and wonderful and the flavors were amazing! I did modify her recipe slightly as I modify all recipes I make for example in this recipe I did not use the lemon or the dill. I wanted to stick with more traditional flavors. First I went out to my herb garden to pick some rosemary, thyme, and parsley. Then I unwrapped the leg of lamb and cut 1/2″ slits all over the lamb. I also made sure to get out some garlic, and olive oil to use as a base to rub all over. I then minced all of the herbs and rubbed them all over the lamb as well.
The other wonderful thing about having leg of lamb is it provided the perfect opportunity to try my friend Lisa’s amazing mint jelly and that is just what it was….”Amazing!” The lamb was “Amazing” as well! Not only that we had a wonderful dinner with family which is “Priceless”.
