Sometimes it seems like when we decide to eat healthy that we have to spend a lot more money to be healthy so recently I went to see a nutritionist because I was eating like a cave woman but not losing weight so I thought I am going to need some professional help. Luckily I was able to use my health insurance so it was affordable…a lot more affordable than the commercial weight loss companies out there. Let me tell you what I found out which is obvious to many of you but since the Viking and I garden and have such an abundance of wonderful food we grow sometimes we don’t know when to say enough. Too much of a good thing is too much of a good thing! So I learned that I love nutritious healthy food but I also have too much fat intake which is a big part of the problem in me not being able to shed the weight. So I love avacados, mixed nuts, and butter but I am going to have to cut down my portions of those foods dramatically.
Here are some of the pics of some of the healthy eats I have had this past week! I have learned eating less fat doesn’t mean that I have to sacrifice on taste and it has been a fairly easy transition and so far so good!
The first picture is of my fish taco lunch the other day I had – YUM!
3 oz. cod cooked up with a specialty fish rub in a tsp. of olive oil
mushrooms/onions/peppers cooked with it in the pan
then I warmed up a low carb tortilla from the tortilla factory
w/ lettuce and tomato,
1/4 C. low-fat shredded cheese
and to top it all of a dollop of non fat greek yogurt.
This is tuna fish on top of whole wheat grain toast with reduced fat mayonnaise on a bed of lettuce and tomatoes and salt and pepper to taste! Yes there is a little bit of home made relish in this too it was so good! I served it up with some fresh blackberries from the garden for my husband and me!
Lastly I made a smoothie today actually with a cup of non fat greek yogurt, a banana, some ice, and a tsp. of cocoa powder it really hit the spot! All in all I am just having to change a few habits and I am having to drink lots of water but so far so good! I have lost 19 lbs. and hope to be losing more soon! The best part of the results is having my blood sugar in a good range and feeling better too!
And it’s also that time again! Time for The Ole’ Saturday Homesteading Trading Post Edition No. 26 and I can’t wait to see what all of you are up to!
We are getting ready to have to clear all of the garden beds out with plants that have bolted etc….and start our late summer garden! We will load the garden up now with tons of peppers, eggplant, squash and tomatoes! I love all of these foods and cannot have enough of any of them! Where do these weeks go so fast?

We try to eat healthy all week and splurge once on the weekends. I know what you mean about the fats as I love my mayonnaise. You know those lean cuisine meals or frozen dinners… that’s about how much food we should be eating at a meal… plus we like to toss in a big salad with olive oil, lemon juice, garlic, salt and pepper…. eating healthy can be easy.. we just need to play with the condiments to make it worth our while. Mr. CBB thanks for stopping over here…..that was something I learned from the nutritionist that our bodies can only properly metabolize 300 to 500 calories at one sitting so it explains why fast food is causing such a problem globally at this point. We are no longer fast food eaters we ditched that way of live several years ago but now really having to turn our fridge and pantry into a metabolic storehouse of foods! See ya’ soon! 🙂
Hey Karen, Awesome job on the 19 pounds!! Hurray for you. I teeter on the edge w/ blood glucose issues, and one of the main things I’ve learned in the past two years is this… it’s not fat that is the problem, sure, you can’t just eat sticks of butter… It is the carbohydrates, particularly those from cereal grains ie: wheat, rye, oats, et.al. Check out Rob Wolffs Paleo Solution ( It’s a good primer, but I don’t like his colloquial delivery…I actually prefer Cordain’s [Wolff’s mentor] work; more scholarly if you prefer). Also, for anyone with blood sugar issues the un-equaled tome in my opinion would be Dr. Richard Bernstein’s The Diabetes Solution. Just an FYI. I’m approaching a 50# loss by removing the carbs. It may shed some light for you too.
