Do you ever get home from work and you are absolutely exhausted? That is how my Monday’s are often…they rarely go as planned and if there is going to be a Technology emergency it’s going to happen on a Monday or Friday for sure. But this recipe is the cure for what ails you on your Monday night when you are exhausted and you want something delicious and some comfort food for very little effort!
What you need?
4 chicken breasts
2 tsp. olive oil
10 oz. risotto
Homemade Chicken Broth 2 Cups
Splash of Wine
2 TBSP. of butter
Parmesan Cheese
Herbs De Provence
Italian Herbs
Frozen Peas
an Onion
Salt & Pepper
First I place 4 chicken breasts in a cast iron skillet with about 2 tsp. of olive oil and I place them on medium heat.
Then I place 2 TBSP. of butter in a stainless steel skillet and I cut up about 8 nice sized mushrooms and a small onion and toss in while the butter is sizzling and then I add about 10 oz. of risotto.
I absolutely adore the smell of onions and mushrooms cooking YUM!
Once you toss in the Risotto you have to toss in the peas! I threw in about a 1/3 of a frozen bag of peas so about 4 to 6 oz. of peas.
Throw in 2 Cups frozen broth, salt & pepper to taste and sprinkle in some parmesan cheese and cover with lid for about 30 minutes and place on low.
While the chicken is cooking throw some Herbs De Provence on them….the chicken is quite plain in this recipe but it’s okay because all the action is going on in the Risotto dish!
This risotto ends up being kind of creamy tasting and it’s comfort food all the way and the chicken well its healthy but delicious!
