I don’t bake a lot truthfully so when I do the men in our household raise the bar high! They expect something phenomenal and this recipe doesn’t miss I promise!
Often people do not cook with currants or corinthian raisins any more we always stick with the tried and true raisin but currants are a lot like raisins just tinier and they are yummy! Currants are packed with nutrients that are good for you including potassium, protein, copper, and manganese.
So even though you are eating a delectable crunchy treat you can feel good about it. This is also a cookie recipe that is not overloaded with butter it’s just the right amount and keeps the cookie crunchy which was part of my plan!
My favorite addition to any cookie recipe is homemade vanilla and this wonderful homemade vanilla from my friend Katherine really adds that special something to this homemade recipe.
Please be careful not to eat all the batter because I promise it’s addicting! I love that crunchy texture with the brown sugar….Oh my!
Ingredients:
- 1 Cup Pecans
- 1 Stick of Butter
- 1 Cup Dark Brown Sugar
- 1 Cup Granulated Sugar
- 2 large eggs
- 2 tsp. vanilla extract (I used my vanilla made by my friend Katherine she makes hers with rum)
- 1 1/4 Cup all-purpose flour
- 1 tsp. baking powder
- 1 tsp. cinnamon
- 1 tsp. salt
- 3 Cups Old Fashioned Oatmeal
- 1 Cup Currants
- ! Cup Chocolate Chips
Instructions:
Pre-heat the oven to 350 degrees.
Stir the flour, baking powder, cinnamon, and salt together in a mixing bowl, and slowly add the dry ingredients into your bowl or mixer where you have the butter, sugar, and eggs mixing. Then add the oats, currants, and pecans and mix until combined well.
Using a spoon drop cookies in the size you prefer on to a lightly greased cookie sheet or you can use parchment paper if you like. Transfer to a baking rack if you like and cool completely.
