Chicken Surprise
This dinner was born out of a need for speed and us having very little time to spend on it but that is the really amazing thing about the All American Sun Oven we were working in the yard and the Sun Oven did all the work for us! I named this Chicken Suprise because this is our version of our recipe but you can doctor it up how ever you like.
We used the double stack enamel container for Sun Oven….perfect for this put the same ingredients exactly into both pots:
Recipe (Place items in both parts of the pot top and bottom)
2 chicken breasts
1 Cup rice
2 Cups chicken stock
1/2 C. coconut milk
1/4 C. diced onions
1/2 can of canned tomatoes such as Rotel (mild) or home canned tomatoes
1/2 C. diced peppers
dash of garlic
1 tsp. of thyme
salt and pepper to taste
The coconut really lended a nice sweeter flavor and a little more creaminess but you could omit or add some half and half if you like. This recipe is not such an exact recipe but you get the idea it’s a casserole and it was delish!
We worked in the yard all day while our dinner cooked itself up for us and I must say I am always still so impressed with how evenly our sun oven cooks up all our food and this recipe made up a good enough amount I had some for work the next day for my lunch. I love a recipe that comes together easily, quickly, and frugally such as this one! Comfort food really does come in all different kind of meals plus I am comforted knowing that this meal as a sustainable adventure!
