Garlic Scape and Basil Pesto
Hi friends! I hope all of you are having a fabulous Saturday and I hope everyone is having a wonderful summer!
Okay so I think we can all agree that pesto is pretty amazing! But garlic scape pesto? When I first heard this was a thing I was kind of skeptical, I thought this kind of sounds like you are putting weeds in your food because I didn’t know what a garlic scape was. If you don’t know what a garlic scape is a garlic scape is this long towering greenery that stems from certain varieties of garlic. Of course now I love weeds in my food and this is a fantastic summer recipe it really hits the spot and makes any dish just about taste fresher and appetizing!
Garlic Scape and Basil Pesto
Ingredients:
2 Cups Basil
8 – 10 Garlic Scapes ( I didn’t even chop them I just shoved them in the food processor)
1/4 Cup Pine Nuts
1/4 Cup parmesan cheese
1/2 Cup Olive Oil
You do not need to add salt and pepper as I usually save to use in recipes! Oh and remember you can adjust any of these ingredients to suit your preference!
Instructions:
A food processor makes this recipe so easy!
Rinse all of your basil and garlic scapes.
Simply just place your basil, pesto, pine nuts, parmesan cheese, and olive oil in the food processor and pulse until you get the desired consistency you want.
I like to place these in half cup containers in the freezer and half cup is perfect to spoon over 4 chicken breasts and or to toss in a pasta dish meant to feed 4 to 6 people.
The Viking and I made up chicken, gluten-free pasta, and this pesto, it was so good and made so much that I brought it in two days this past week for lunch; it really re-heats beautifully! I hope you enjoy this recipe as much as we do!

I love garlic scapes. We gave away 4 shopping bags full last year that my father-in-law gave us as we couldn’t keep up with them and the baby. Great recipe. Sharing.
